So what will I be missing with this car vs. the LTZ?
The only thing I can think of is fog lights and two-tone leather seats? What about power-adjusting pedals?

Oh yeah - after reading the other thread on aftermarket grill, another difference is the chrome grill.

Heated mirrors, driver side auto dimming mirror.
I have these on my Avalanche, and really miss that on my GP, especially in the winter.

Yes, it is not easy to scrape ice off mirrors.
What about chrome tip exhaust?
I updated my list and put a link in the show what is standard or optional.

The LTZ instrument cluster has a redline indicator and illumintation is Blue. With the LT the illumination is green and it does not include a redline indicator.
LT2 and LTZ's include:
Rear Reading lamps
Universal Home Remote
Auto dimming mirror with compass
The LT2 with the 6 cyl. is slightly lighter than the LTZ. and should be faster as a result. :p:D

I've never owned heated mirrors (loving the heated seats) do they work well?

They work well. It's one of those things - what did I do before? I was the same about the TPMS and back-up camera. Now I can't do without them.

Im not a fan of chrome do dads and wanted to go with as much monotone as possible. So to get my new 09 with solid white I had to go the LT2 route with the V6 option to get PAINTED DOOR HANDLES. The LTZ has chrome handles and the LT@ has body colored handles.
Im asking around now now to get rid of the chrome around the side windows. I would like to find a way to get the matte or satin Black you see on other more sporty cars where the chrome is. Don't know if anyone makes and aftermarket stuff for this yet or not. If so, maybe could have it painted or powder coated.
