well this morning i was checking all my fluids in my car and came across mayonnaise like gunk in the cap of my coolant overflow tank. There is also no sign of any gunk in the oil.
I also heard that short trips without letting the car heat up can cause this. what do you guys think?

Get a flush and put some new stuff in. Might have just been old.

It could get up there. My old '98 had that. At least in my case it just needed a full flush and new coolant.

my 98 has been leaking coolant since I got it last year. no one could find a leak... added coolant every 2 weeks at least... never ran hot until the other day, changed the water pump & after the test drive, checked the oil and it is like chocolate pudding! I've found LOTS of blogs/forums about this problem. People with all years models, even have law suits filed against GM for their "DEX COOL" Haveing to change the gasket 2 or more times. I really hope this is all!
Has any one else had this problem? Any advice?

I have a 2000 malibu and had same problem you discribe ,the problem was the manifold gasket .On these cars the original gasket was eaten by the coolant so when they put a new gasket they use a improved one .This may or may not be your problem.Also in side the engine wwwhere oil is it has a dark molasses look . if your gasket is leaking look at front of engine where the manifold is (intake) it might be wet Good luck
