Do you all alternate between the Maintenance I and Maintenance II every oil change? my Car has about 40,000 miles on it. I get the recommended services on it ever 25K miles but it the Maintenance I & II necessary ever oil change as well (4Kmille)??

It says to "inspect this, check that," really common sense items. Dealerships and well-run shops will run through multi-point inspection check-off sheets everytime they get your vehicle on the lift. If you did your own oil changes, you'd look things over while the oil is draining.

I change my oil every 5k, so 5k=maint I then at 10k = maint II etc.
If you are doing it yourself you make want to start with II.
When the CHANGE OIL SOON message appears,
certain services, checks, and inspections are required.
Required services are described in the following for
“Maintenance I” and “Maintenance II.” Generally, it is
recommended that the first service be Maintenance I, the
second service be Maintenance II, and then alternate
Maintenance I and Maintenance II thereafter. However,
in some cases, Maintenance II may be required more
often.
Maintenance I — Use Maintenance I if the message
displays within 10 months since the vehicle was
purchased or Maintenance II was performed.
Maintenance II — Use Maintenance II if the previous
service performed was Maintenance I. Always use
Maintenance II whenever the message displays
10 months or more since the last service or if the
message has not come on at all for one year.

GM's simplified maintenance schedule which revolves around maintenance I and maintenance II is a great idea but it seems dealers in my area either don’t offer it or way over charge for it. (59.99 for I and 89.99 for II)
If you have them change your oil, filter and rotate your tires and perform the 27-point vehicle inspection every time the change oil soon message displays you will be fine.
GM's Multi Point Vehicle Inspection covers all the "inspect and check" points of Maint I and II and it is free at most dealerships with any service. So i just dont see the point of Maint I and II.

The thing is the Maintenance I & II are, to me, very expense.
Maintenance I : $97
Maintenance II :$155
Is that expense to you all, or should I just get over it?

I suppose it kind of adds up if you were taking it in for an oil change every 4k miles. I'd say you're overdoing it. Since I don't know what the prevailing rate is like in your area, I can't comment on the charges. You should perhaps check with other dealerships and independent shops (it's not like a master mechanic would be doing oil changes anyway).
As an aside, I don't understand why people are willing to spend all that money on oil changes, unnecessarily so at that, and then plain balk at the GM extended warranty. It's not like oil changes are going to prevent myriad other things that can/will break.
