Maybe the dipstick wasn't all the way down, either due to gallery pressure pushing it up or from some kind of obstruction when inserting the last time.
Oil doesn't get stored like some folks think camels store water (in their humps), and then reappear. It was always there. You would be wise to drain off the excess or it could start blowing out seals, and then you'll be in a bigger mess.
