I'm currently shopping for some new wheels and tires for my 2007 Malibu LS but I am not quite sure how big the wheels/tires I can get without actually modifying anything in my car.

A few friends recommended 18" which is actually what I am looking for but I would like to go higher if I can too.

I am looking in the general websites that we know such as Discount Tires, Tire Rack and a new one for me Wheel Fire.

DT have packages up to 17"
TR have packages up to 19"
WF have packages up to 20"

So I am a bit confused as to which website or information is correct in regards to what my car can fit and hold without modifying anything inside, since they state different limits than the other websites too.

What can my Malibu run on? In regards to plus sizing the wheels/tires.

According to my guide you can run up to a 20" wheel on your Malibu but the width of the wheel is a little more limiting. My guide recommends wheels up to 7.5" wide but with the right offset you may be able to run a 20x8" wide wheel.

Falken Builds their RT5 in a 20x7.5 with a +40mm offset for your vehicle. With some super low profile tires (225/35R20 or 235/30R20) these should work for you.
